If you’re like me, you love the taste of real bread, but definitely not the carbs that come with it!  Through much research and experimentation, Skinny Sourdough was born. By using a triple-freeze technique, we’ve created a starter with live active cultures that naturally reduce the inflammatory gluten and simultaneously reduces the glycemic index & net carbohydrate content of your homemade sourdough.

The science behind this process hinges on the principle of starch retrogradation. When our sourdough is mixed and proofed, the starch granules “gelatinize”. The triple-freeze cycle we employ forces these gelatinized starch molecules to recrystallize into a tightly packed, resistant structure. Upon baking, this restructured starch becomes a form of Type 3 Resistant Starch (RS3), a form of insoluble dietary fiber. Because your body cannot digest resistant starch, it passes through the digestive system without being converted into blood sugar, reducing the net carbohydrates and glycemic impact of the finished bread. This means you can savour the crackly crust and complex flavour of authentic sourdough while still aligning with your health-conscious goals.
